Here is a slightly more detailed version for cutting and pasting.
Mini Donuts
1 cup whole milk
1 T active dry yeast
2 - 2 1/2 C flour
6 T butter, room temperature
1/3 C sugar
2 scant teaspoons salt
2 large eggs
2 cups oil
sugar for dusting
* Warm milk over low heat until it lukewarm. {this is for waking up the yeast} It shouldn't be hot or cold.
* Mix flour and yeast in a large bowl.
* Mix in the butter with a fork, or your fingers.
* Add in sugar and salt.
* Add the eggs and milk. Mix well.
* Stir vigorously until the dough is shiny and stretchy. Add more flour if it is too wet. It should be really sticky, but not runny.
* Scrape the dough out onto a floured surface. Knead a bit and shape into a ball. Place into a lightly floured bowl and cover with a towel. Let rise for 1 hour.
* Scrape the dough out onto a floured surface. Divide into two, roll out carefully, using as little flour as you can. I just used my hands, the dough is really soft. It should be about 1/2 inch thick.
* Cut out doughnuts with a cookie cutter, or a glass. I just poked a hole in the middle with my finger, but you could cut them out with some sort of kitchen tool that I don't have.
* Set on a lightly oiled and floured baking pan with sufficient space between each. Let them rise until they are nice and puffy, about 25 min in a warm kitchen..
* Heat up your oil in a deep pan, until it is 350ยบ F.
* Drop the donuts in, a few at a time with a slotted spoon. Flip them when they are a nice golden brown on the bottom, and remove them after the other side cooks. It takes about 30 seconds per side, if the oil is hot enough.
* Let them cool off a bit before rolling them in sugar.
* I used regular sugar, because that's what we had... but you can use fancy sugar, or icing, if you want.
*Roll them until they are totally covered.
* Try not to eat them all at once, have a friend come over to help you!
